Chart.appVersion should be quoted string
Set Values.image.tag to inherit value from Chart.AppVersion

Checks seem to be failing due to an issue with the Setup k3s latest step, unrelated to the PR. I will force push again to retrigger the tests in awhile.

@timetinytim Can you please review? Apologies for the aggressive tag. I'd just like to have this merged before v4.3.0’s release that will split the streaming server into its own image.
