Currently this cannot be done within the theme.json and I didn't find a filter to edit it but there likely is a way. I am moving this to the kindling project as a future feature or it might be added to theme.json later by the developers. The font weights list does work, it just won't change anything on some of the listed weights.

Alternatively it could be simply disabled for all blocks so the editor could use regular, regular italic, bold, and bold italic only.

Updating this to change it to enabling all of these weights. That worked well for STL Sports. The defaults for h1, h2, etc can have their weights preassigned and then be changed on the block level as needed.
