Update Elasticsearch in Test Workflow
Update Elasticsearch in Helm Chart

@michaelitrockt This will be handled in our next update cycle. Wagtail 6.0 has recently been released and it now supports Elasticsearch 8 (We currently run Wagtail v5 with Elasticsearch v7).
