Update the "optimize-images" script to fix the broken images

During testing the main branch, I tried to build and previous the app locally. I noticed that the images were broken. I believe the issue is on the targetFolder in the optimize-images.

Seems like I was wrong and its only an issue locally. I can't figure out why it's not working for me locally.
