Closes #36.

Adds a 'pixeltrix' class to objects output by click_pixels() and edit_pixels().
Introduces is_pixeltrix() and as_pixeltrix() to check and coerce.
Updates demo matrices to include the new class.
Small tweaks to DESCRIPTION, README and some function documentation.
