Add support for darwin/arm64 (Apple M1) #97

I'm using the new Apple Macbook Pro with an M1 chip, and when I'm running this command

curl -sfL https://raw.githubusercontent.com/matthewmueller/joy/master/install.sh | sh

Error occurred: matthewmueller/joy: platform darwin/arm64 is not supported. Make sure this script is up-to-date and file request at https://github.com/matthewmueller/joy/issues/new
