Not in love with tC but it works... Open to other ideas.

@blyddon22 I was thinking that we can maybe change the mapping that is currently using <Leader>tc to <Leader>tx - I don't personally use that much, but it seems like tx still makes sense... https://github.com/mattjmorrison/dotfiles/blob/91765fe6c1d627f432ae996745758d28058bdc9f/vim/functions/toggle-checkboxes.vim#L89
