Example: there are input files with multiple audio tracks, we should be able to select these as input. And have them match channels count.

Prerequisites:

We should have ffprobe logic in place to figure out
Instruct ffmpeg to select a particular input stream with the -map option
We can probably do this once we have "skip ffmpeg job" logic in place, that relies on ffprobe (like what is described here: https://github.com/matvp91/mixwave/issues/58)
