It seems that (at least in German shops) the U3V12F5 is slowly phased out and not re-orderd, as even Polulu is listing it as "Not Recommended for New Design"
On the quick I went with an Polulu U1V10F5. I think it should work fine as they are quite similar (U1 only does 1.2 instead of 1.4 Amps, but works from 0.5 instead of "just" 2.5V and such details).
What I have to watch is that Vin and Vout are on the opposite sides, so I have to put it in components down, but otherwise it should work, right?
PS: to not open several cases at once, I just wanted to mention that the link for the Video Module Image runs into an 404.
