The missing dashes are probably because the words were split across two lines. A PG transcription often has those kind of problems, because they remove the dashes from words split across lines without checking to see if they should still be there if they were all on one line. E.g., removing one from "al-ready" is correct, but from "old-fashioned" isn't.
