A quick gesture to switch the split screen on/off would be great, maybe something like three fingers swiping up/down or something like that.

You add the gesture yourself in the settings. Just add the action selection option.

I don't see that option anywhere on settings. Where do I find it?

No, it was only in some beta test version on discord. It hasn't been updated since.
