Fix descriptions of required dataset layout in function documentation #119

As pointed out by @earcanal in #118, the descriptions of the expected dataframes in the function documentation are now out of data.

This seems like a small issue, but will need quite a bit of work to enforce consistency across all docs/vignettes/etc.
