I am very sorry, but i cannot reproduce this issue. I am able to install directly from F-Droid and via adb sideloading (on an android 8 emulator). Maybe your file got corrupted?
I downloaded https://github.com/mediathekview/zapp/releases/download/v8.0.0/zapp-8.0.0.apk directly on the Android TV. I was able to open the downloaded file within TotalCommander on Android TV like a ZIP file and could browse through the content. Also, I downloaded twice to make sure the file is not corrupt. But then I'll try later once more...
I tried once more with 8.1.0 with the same result: "Bad or split APK" is the error message. It does work with 7.0.3 and older.
However, perhaps I am mistaken regarding what version of Android it is. I always thought, Fire TV is Android 8 Oreo, but perhaps I mixed that up with the Philips TV version. I'll double check the Fire TV and its Android TV version tomorrow.
Gosh, today I learnt that my Fire TV Stick 4K uses FireOS 6.2.9.4 which is still based on Android 7. That explains why Zapp 8.x does not install on it anymore, I guess.
Sigh, time for a new Android TV stick then ...

Oh yes, it does, but all the new stuff and bugfixes ...
When trying to install the latest Zapp 8.0.0 (have not yet tried with 8.1.0 but the changelog does not suggest that something has changed) on my Android 8 Oreo based Android TV, I get the error message that the APK cannot be installed because it is a split APK.
The changelog only mentioned the drop of Android 7.
