Bump helm charts default version in cht-deploy #9614

Describe the issue We've released v1.2.0 of the helm charts, but cht-deploy loads 1.1x by default.

Describe the improvement you'd like Change it so cht-deploy always gets 1... We might release a major for helm charts (?) at some point.
