Create container version of matchbox #2

A working container version of the matchbox server as an initial dependency for the project should be added in a separate folder to allow other developers to run the program and be setup so that a copy of it could be used for deployment.

Ideally a docker-compose file should be added this folder with all the files and other initialisations already pre-configured and mounted.

If there is no working official image available create your own using the CI of this project or link to a separate project which builds the server and provides the image.

this is not necessary anymore as we have decided to implement the tranformation of fhir resources ourselves without the need for the structure map
