There was a problem where deployments were failing because ZITADEL_INSTANCE_URL (wrongly named) was migrated to ZITADEL_INSTANCE_HOST (since the value lacks the http(s) protocol).
The github env vars hadn't been updated, but this highlighted a bunch of out-of-sync env vars, which are updated in this PR
Going to self-merge this as time is tight and I'd rather focus review time on the more controversial / logically dense PRs
