Would love support for the Wireless On/Off Buttons bundled with the Outlets. So we could trigger scenes/moods and Siri Shortcuts (with iOS 13) using the button.

I would love this as well! Last I checked this was not possible. Haven't checked recently. If I find out anything I will let you know.
Its slightly possible with some limitations if you've got a smart things hub. (V2 or V3). You can pair your tradfri controllers to your ST hub and the homebrudge plugin will do the rest. I currently have a TRADFRI 5 button remote show up on homekit and each button on the remote can be paired with a different device or scene and control them accordingly.
To add to this, I'm currently figuring out the dimmers (steering wheel one). The dimmers accurately report back their status to ST and then homekit but I haven't been able to pair any of them to control an existing device on homekit. You can group the dimmer wheel and light, but still won't do much.

+1 to this request. On/Off switches are very useful by themselves and would be a perfect companion for HomeKit as standalone devices.

Would it be possible to expose the TRADFRI steering devices (motion sensor, dimmer, tradfri remote and On/Off switch) in HomeKit as a button?
Similar to how Hue Dimmer Switch is exposed by the Hue bridge:
With the current implementation by IKEA the controlling accessoires don't report back to the hub when they are actually controlled, meaning you can't actually assign the buttons to do anything or see when they are controlled, but battery level of the accessories is exposed to the hub and appears to be available in the API. However, battery level and signal strength data for instance is exposed to Home Assistant in their implementation.
For a HomeKit implementation, compared to the above image from the Hue Dimmer they would lack the options to assign actions to buttons. The motion sensor could therefor perhaps also just be shown as a button, as the gateway will never update its status to triggered.
My use case for this: I have a few dimmers, a motion sensor and an On/Off switch (that is sold combined with a Control Outlet) hanging around the house. Would be nice to be able to see which rooms they are located in and to get a report on their battery level from the Home app to know when it's time to replace the battery.
