What does this PR do?

[x] Upgrade deps;
[x] Replace EntityServiceAPI with DocumentServiceAPI: https://docs.strapi.io/dev-docs/migration/v4-to-v5/additional-resources/from-entity-service-to-document-service;
[x] Removed @strapi/helper-plugin: https://docs.strapi.io/dev-docs/migration/v4-to-v5/additional-resources/helper-plugin
[x] Renamed React files to js for jsx;
[x] Deleted PluginHeader because BaseHeaderLayout isn't exported;
