Rename 'schema' to 'model' #28

While probably more "correct", the term "schema" isn't quite as accessible as "model". Being able to refer to a data "model" feels more intuitive.

Note this means modifying "sub-schema" references and another breaking change to convert schema Design key to model. :boom:
