Archive this `demo-project` repo and replace with examples in `meltano/meltano` #29

@sbalnojan, @tayloramurphy, @pandemicsyn - I think we probably should archive this repo, optionally moving any helpful tests into the example repo which is now in the main repo: https://github.com/meltano/meltano/tree/main/docs/example-library

We may not have anything unique here that we need to migrate, but if so, it should probably live in meltano/meltano so it can iterate and be tested along with the main project.

As of now, CI/CD is not enabled here. I worry that without tests, we can't have confidence that the project still works.

Making this more complex, this repo uses Salesforce and Postgres, which are problematic to test without external credentials.

@aaronsteers Sure, I agree, no need to provide potentially broken projects, that makes an awful onboarding experience. Let's just keep in mind to remove it from the docs as well then (I put it into the example sectino).

@sbalnojan - Yeah, totally makes sense. Thanks for wrangling all of these various demo projects together - some of which I'd lost visibility to myself.

I'm going to go ahead and archive this and dropped a comment also in the 'example projects' issue.
