I added a step 0 to first show off the workings of Meltano before going on to build it (that requires prebuilding & preloading the extractors & loaders for a smooth experience, that's included)
I split up the demo into multiple levels to reduce the size of the individual ones and broke a few steps into smaller ones to make them move smooth.
added "open *.md files with preview by default" as config option to vs code.
