Fix: resolve Embedchain and mem0 dependency conflicts

Description

• Updated Embedchain dependency to ensure compatibility with mem0
• Adjusted version constraints to allow for mem0ai 0.1.14 and greater
• Verified that Embedchain functions correctly with the updated mem0 version
