Only build for vesctl supported platforms? #27

The release action builds binaries for all supported Terraform/OpenTofu platforms, but the only resources currently exposed require vesctl which is published in mac and linux amd64 flavours.

Related to #22 - if other experimental resources and/or data sources are added then this should be closed as wontfix.
