Enable Zeitwerk gem mode #337

Looking to address two related issues currently open.

This is a work in progress for now, only works in ActiveRecord and might have other breaking changes.

Coverage increased (+15.6%) to 96.27% when pulling 54ccad5554b0d4e7f317642a7870495369482d96 on tc-zeitwerk into b32f875204bf339e20e7046819d6d915be57bdff on master.
