Update Lithops to the latest version #1429

In order to test the AWS cloud as a backend for processing datasets, we need to update to the latest version of Lithops.

Lithops 3.0.0

Update to this version failed due to existing bugs in Lithops. Details in this issue: https://github.com/lithops-cloud/lithops/issues/1158

Lithops 3.0.1

Staging testing was successful. We are waiting for the release.
