Rename to `metatensor-models` #4

3 is changing the naming to metatensor_models. I feel like metatensor-models is more in line with our other packages

We could also have the distribution name be metatensor-models with the corresponding Python module lives in metatensor.models (i.e. the code in this repo is in src/metatensor/models)

Another contender here would be to name the package (some variation on) metatensor-atomistic-models, since this repo will be specific to one class of models.
