This PR involves some changes to the Episode 53 transcript (Transcripts/EP_53_Mauricio_Aniche.md) and makes several improvements to it, including grammar and punctuation fixes among other things.

Description of changes
Changes I made include:
Minor grammar fixes throughout the document.
Punctuation fixes.
There were a lot of instances of a question mark together with a period (?.), all of these have been replaced by a single question mark.
Other minor punctuation fixes were applied.
Capitalization of words at the beginnings of sentences.
Removed some instances of word duplication. This includes:
Instances where a word appeared twice in the transcript but the sentence would be incorrect with two instances.
Instances where a word appeared twice in the transcript but the speaker only said it once.
Addition of words which were omitted by the auto-generation.
Adjusted lines and paragraphs which did not meet the ~80-chars max line wrap format. These lines/paragraphs now fit the format.

I believe "UI testing" is the last type of testing mentioned.
I made this change within the .md file and L297 now reads

The "(??)" was replaced with "UI".
I am not completely certain that this is correct and will revisit this transcript at a later date, after reviewing the podcast audio again.
