Updated docker section showing how to use docker run to set a user and the signing key.
Added docker-compose section showing how to set various variables.

I'm thinking the wiki might be a better place to document the docker compose. I'm also interested in the configuration for nginx with lets encrypt as others might benefit from that. We can include a reference to something like https://testdriven.io/blog/django-lets-encrypt/ to help understanding.

@mguinness I think both sections Docker and Docker-Compose can go in the Wiki with a link to it from the README. If you want to enable the Wiki I think I can clone it and do a PR to it.
