In Christianity there's Baptism, in Judaism there's Circumcision etc. I think it's not reflected in the app, I've only seen Baptism IIRC.

You are right, there is no Circumcision between the person's events. The GEDCOM standard, on which Family Gem is based on, has a limited range of predefined events.

But you can add any custom event going to person's Profile 🡒 Facts 🡒 🡒 Event 🡒 Other 🡒 Event 🡒 🡒 Type.
