Use src-layout in the source tree #110

Closes #108.

Src-layout as defined at https://setuptools.pypa.io/en/latest/userguide/package_discovery.html#src-layout

This prevents spuriously using files under pymmcore/ when trying to test a locally installed pymmcore.
