confirm ability to generate excel artifact #51

@sujaypatil96 improved the excel generator recently, so let's try it on MIxS

I just removed --exclude excel from the gen-project section in the Makefile

The next-to-last generated artifact, mixs.shacl.ttl, was last modified on my local computer at 17:07

The excel file, mixs.xlsx, was last modified at 18:46... it looks like it took 1 hour and 40 minutes to generate. I don't think that's included in any GH actions at this time.

There are tabs for all of the Environment * Checklist classes. That may be overwhelming for some users to navigate through, but I do think it's what we want.

I have only opened the excel file with LibreOffice on Ubuntu Linux so far. Qualitatively, it looked good.
