Replace `docker-compose` with `docker compose` #436

I didn't think I should change anything beside Makefile and .gitpod.yml. In fact I'm not even sure about .gitpod.yml.

There were many appearances of docker-compose in files from the dependencies, and also in the context of the docker-compose.yml filename

Based on everything I see in the search results for "docker-compose" (in this repo) on GitHub, this branch addresses all the "docker-compose" string occurrences I want it to, and none of the ones I don't. I'm comfortable with it being merged in.
