Ah yeah, this sounds like a known issue in Unity (@JBrentJ?) we've been running into with UWP. Are you able to debug using a Release build? I've tended to be able to do just about everything I need to do by debugging Release builds instead of Debug builds.

Microsoft Mixed Reality Toolkit version 2 (MRTK2) is currently in limited support. This means that Microsoft is only fixing high priority security issues. Unfortunately, this issue does not meet the necessary priority and will be closed. If you strongly feel that this issue deserves more attention, please open a new issue and explain why it is important.
Microsoft recommends that all new HoloLens 2 Unity applications use MRTK3 instead of MRTK2.
Please note that MRTK3 was released in August 2023. It features an all-new architecture for developing rich mixed reality experiences and has a minimum requirement of Unity 2021.3 LTS. For more information about MRTK3, please visit https://www.mixedrealitytoolkit.org.
Thank you for your continued support of the Mixed Reality Toolkit!
Describe the bug
Each time I try to build the hololens2 hand interaction demo scene, it builds and compiles in the visual studio editor but then when I try to debug/deploy it throws this error and complains about the two pdb files not being able to be loaded. At that point you can not move forward and you must click stop. It has still deployed in the headset so upon a restart you will be able to open the app. However for debugging purposes, this is not helpful. (MRTK 2.5.1)
