[Release] Increase version to 2.5.6 #3

First Initial release from this repo

Unpins from ApplicationInsights v2.8.5 to be more flexible -> "^2.8.5" so we don't have to release in lock-step anymore (just like Angular) This will enable us to release based on framework (react-native) updates and only for major AI feature updates that we need to add to this plugin.
