Deployed the app and installed it however, can't seem to make any rooms, stuck after pressing the create button after giving the room a title and description with an image.

I had the same problem. In the logs I've found the problem with access through the application access policy. The resolution is to add the user you've created in AAD for the step 2.v.d to the application police in the step 5.iii.e. Then it works.
