Update react pipeline to match current @fluentui/react-theme #53

Theme shape for @fluentui/react-theme was updated in microsoft/fluentui/pull/20041, mainly for performance and bundle size reasons.

This PR updates the fluentui-react part of the pipeline to match the output.
