update to pangeo/base-image:latest #60

Thanks for this. I have a slight preference for keeping them pinned, just so I can control when we update the base image independently of when we update the packages. Would you be able to update this to the latest pin?

Yes, will do. I paused to reconsider the approach and figure out which images to use. Would you be interested in a generic update to the content of the conda envs or should we keep those as-are for now?

Closing as (some of) the images have been updated. Sorry about the late action...
