Update crawler to support Capella fork

Description

With the new upgrade to include withdrawals, the fork digest of the crawler needs to be updated to keep up synced with the chain

Mods

The PR includes:

• the addition of capella fork-digests for Mainnet and Prater
• update of dependencies for capella
• config update to fetch fork-digest easier from remote hosts
