Coming from #61 and #62 , seems that the docker-compose file could be extended by adding a bit more of configurability (at least a more straight forward one from the .env file)
This PR addresses those modifications, while making more explicit descriptions of how to set up the crawler using the docker-compose (which wasn't that clear)
