Using v1.6.0 of MineCells, so I know it's slightly outdated, however I also haven't seen any recent changes to the code, any existing issues or any changelog addressing this issue.
I'm running a private server with a number of mods, including MineCells, and the following server crash occurred while a player was exploring the Nether: crash-2024-01-17_12.45.54-server.txt
I see the issue occurred due to a Pillager entity called a "Sanctum Cultist", which I believe is from the Incendium mod.
