[SofaCaribou] Compilation with SOFA v21.12 #88

Needs SOFA to be shipped with Sofa.Compat.

Not sure at all what's going on with MacOS..... I'm very tempted to just merge this as it is and fix MacOS later. I will give it a last try this evening.

By the way, thanks a lot for this PR @fredroy ! I will probably drop the support for v20.XX SOFA version soon, I just wanted to do a first 1.0 version release.

Looks like a GH action cache issue:

I'm going to merge this and invalidate the cache in another PR.
