Update project #5

This PR resolves all open issues (#1, #2, and #3) and also makes the other PR (#4) obsolete.

Changelog

Run Minio instance as non-root user (Fixes #1).
Make Minio data only writable by user defined in Dockerfile (Fixes #2).
Fix Let's Encrypt support (Fixes #3).
Update README with more explicit installation instructions.

For the README, I've adapted a structure similar to the dokku-sentry README.

@slypix I'd appreciate any comments! I think this PR benefits the project and updates it, to make it compatible with the current status of Dokku.
