Investigate appropriate replay session rates for Sentry #3875

User Need

As an Operations Engineering Team I want to know that we have appropriately sized quotas available for Session Replays so that we don't run out of the quota before the end of the month.

Value

By understand appropriate levels of usage we can size the subscription appropriately so that we don't run out of sessions. We ran out this month (November) due to the way a project was configured. The MoJ quota is set to the default of 500 sessions.

Functional Requirements:

  1. We should understand best practice guidance on appropriate levels
  2. We should understand who is using the current feature.
  3. We should ask Sentry for some usage estimates

Acceptance Criteria:

  1. We have data that helps us understand usage so that we can estimate an appropriate level for the organisation.
