Update security.txt file to correct the jobs link and update expiry. #486

This is a security validation file that helps technical users understand that we are maintaining the security of our site. The expiry can only be up to one year in advance, so has been updated to 11:59pm on 31st of Dec this year.

This also rebuilds the documentation here, just confirming that the latest versions are present in PDF and EPUB formats.
