Pros:

Faster: installer does not have to be downloaded (multiple times).
More transparency: know what code is executed, updates are obvious in git.
More flexibility: might adapt Omnibus installer to chef-runner's needs.

Cons:

Installer needs to be updated with new chef-runner releases.
