I think I saw a presentation one where some people from bikecitizens presented what they do with the gathered data and I thought that could really help in planning better infrastructure

Yes, I think from that presentation there is no info online but https://www.bikecitizens.net/de/radverkehrsdaten-stadtplanung/ looks like what I remember. They talked about other players that where working on this as well. Didn't hear anything about it again, though.
