This is quite a small and nitpicky issue, but I think it's good to have written down somewhere. From my experience flying planes on a simulator, if I set to cross a fix at an altitude, the plane will keep level until a point and then descend at a normal rate. On vice, the aircraft will start descending, but at a very slow pace.
