MNES-1116: Restructure compose files for easy starting #48

Description

Combined all basic compose files into compose.yml
short override files for dev and test
.env is now automatically used by compose.yml
default authentication flag is false, for demo mode, can be set by including auth compose files
sidebar is now displayed even without the authentication flag

FIXED Tried to find out whats wrong with the build pipeline: yarn docker:test results locally in the same errors as in the build pipeline, also the cypress-artifacts aren't working.
