Fixes https://github.com/moderntribe/square1-global-docker/issues/122
Updates brew dependencies, PHP7.4 > PHP8.0 as brew removed 7.4.
Removes bash-completion from Mac installer, everyone is on ZSH anyways.
Updates NVM to 0.39.1 in the installer.

@dpellenwood If whomever was having problems with this can try this version of the installer before we merge, it should now work, let me know:
