Update servant-aeson-specs to > 0.5.1.0 #7

Versions after 0.5.1.0 contain typeclass instances that were added manually in 95b2b2261ee24c84a6f5e32c792ee5a86eab226a.

To upgrade:

Update upper and lower bounds in modernator-haskell.cabal.
Update default.nix to fetch proper version of servant-aeson-specs
Update code.
- Remove manual typeclass instances
- There's a slight breaking change from 0.4 -> 0.5. This might need fixed.
